credit: newspay This spicy cow foot delicacy goes perfectly with chilled beer or palm wine. You don’t have to go to a restaurant to enjoy yourself. This simple recipe will teach you how to make this delicious Igbo delicacy yourself. This spicy cow foot dish originated from South East Nigeria. Ingredients 2kg cow foot (cut into sizeable pieces) 20cl (200ml) Palm Oil 1 tablespoon powdered edible potash (Akanwu/Kaun/Keun) 1 teaspoon ground Ehu seeds (Calabash Nutmeg) 2 tablespoons ground crayfish Peppers (to your taste) 1 medium onion 2 big stock cubes Salt (to taste) 10 Utazi leaves Preparation 1. Wash the cow foot chunks and place in a pot (preferrably pressure pot due to the tough nature of the meat) along with crushed stock cubes and chopped onion. 2. RECIPE FOR SOY DELIGHT INGREDIENTS soya bean flour 2 -3 cocoyams 4 - 6 cups of water 15-20 boiled prawns 4 big carrots 1 small cabbage 1 big onion 1 big green pepper 2-3 tatashe (red pepper) 2-3 yellow pepper 4 tablespoons dark soy sauce seasoning METHOD OF PREPARATION Peel and dice vegetables. finely chop onion. grind pepper. grate the cocoyams Put soya bean flour in a bowl; add grated cocoyam, onions and 2 teaspoons of dark soy sauce.   mix well and add 1 sachet of seasoning. Add salt to taste. Make mixture into a thick paste. Put water to boil.   Mould mixture into balls (like dumplings), and put them into the boiling water. Let it cook for about 30 minutes. Add diced carrots and let them steam with the sauce for about 2 minutes and then add the cabbage and 2 more tablespoons of dark soy sauce. Add the ground peppers and the prawns. Let it steam for about 2 minutes. The meal is ready.
